  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 2 tablespoons salsa or your easy 2 ingredient sauce

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground turkey and cook until browned, breaking it apart with your spatula.
  3. Stir in the diced sweet potatoes and cook for about 5 minutes, stirring occasionally.
  4. Mix in the black beans, diced tomatoes, garlic powder, paprika, salt, and pepper.
  5. Cover the skillet and simmer until the sweet potatoes are tender, about 10-15 minutes.
  6. If using, stir in the salsa or sauce just before serving.

Notes

Serve with avocado slices or a green salad. Leftovers can be stored in an airtight container for up to 3-4 days or frozen for up to 3 months.
