A delightful breakfast casserole made with eggs, milk, bell peppers, spinach, and cheese, perfect for sharing with family.

Ingredients

  • 6 large eggs
  • 2 cups whole milk
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 cups cubed bread

Instructions

  1. Whisk the eggs together with the whole milk, ground black pepper, and salt until smooth.
  2. Prepare the bell peppers and spinach, then add to the mixture.
  3. Add the cubed bread and fold it into the egg mixture.
  4. Layer in the shredded cheese and give a final stir.
  5. Transfer the mixture to a greased baking dish and refrigerate overnight.
  6. Preheat your oven to 350°F (175°C) the next morning.
  7. Bake uncovered for 45-50 minutes, or until golden brown.
  8. Cool for 10 minutes before slicing.
  9. Serve warm with fresh fruit or hot sauce.

Notes

Leftovers can be stored in the refrigerator for up to five days or frozen for three months. Stale bread works best for soaking up the mixture.
