A simple and hearty dish that captures the comforting flavors of traditional stuffed peppers without the fuss.

Ingredients

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add your chopped onion and minced garlic to the skillet, and sauté until they’re soft, about 3 to 5 minutes.
  3. Brown the ground beef, breaking it up as you go, until nicely browned.
  4. Mix in your cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Allow everything to cook for another 5 minutes to meld flavors.
  6. Melt the cheese on top by covering the skillet for a few minutes.
  7. Serve warm in bowls, stirring gently to combine.

Notes

You can substitute ground beef with turkey or a plant-based alternative. Feel free to add more vegetables for extra nutrients.
