  • 2 tsp Baking Powder
  • 3 Eggs
  • 1/3 cup Maple Syrup
  • 1/3 cup Melted Coconut Oil or Butter
  • 1 tsp Vanilla
  • 1 cup Fresh Blueberries (washed and dried well)
  • 1/2 cup Cottage Cheese (strained of liquid, then blended)
  • 1 Egg Yolk
  • 1 tbsp Maple Syrup or Sugar
  • 1 tbsp Cornstarch

Instructions

  1. Prepare the Creamy Swirl: Blend cottage cheese, egg yolk, sweetener, and cornstarch until smooth.
  2. Make the Flavorful Batter: In a bowl, whisk together eggs, maple syrup, melted coconut oil (or butter), and vanilla. Stir in your chosen flour along with the baking powder. Gently fold in blueberries.
  3. Layer for the Best Texture: Pour half of your batter into a lined loaf pan, then spoon the cheesecake swirl down the center. Top with remaining batter.
  4. Create the Swirl Pattern: Using a knife, swirl through the batter to create a marbled effect.
  5. Bake to Perfection: Bake at 350°F (175°C) for 45–55 minutes. Cover with foil if browning too quickly.
  6. Cool Down for Slicing: Allow loaf to cool completely in the pan before slicing.
