A comforting casserole that combines the flavors of taco night into a hearty dish, featuring seasoned beef, black beans, and melted cheese.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 packet taco seasoning
  • Optional toppings: diced tomatoes, sliced jalapeños, chopped green onions, cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks, then drain any excess fat.
  3. Stir in the taco seasoning and black beans, cooking until heated through.
  4. Layer half of the tortilla chips in a baking dish.
  5. Spoon the beef mixture over the tortilla chips.
  6. Sprinkle half of the shredded cheese over the beef.
  7. Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
  8. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, let cool slightly, then top with sour cream and garnishes.

Notes

Feel free to substitute ground beef with turkey or plant-based meat. This casserole can be made ahead of time and stored in the fridge.
