A comforting casserole that combines the flavors of tacos in an easy, satisfying dish perfect for any gathering.

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 packet taco seasoning
  • Optional garnishes: diced tomatoes, chopped green onions, jalapeños

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat, then add the taco seasoning and black beans. Mix until well combined.
  3. Layer half of the tortilla chips at the bottom of a baking dish.
  4. Top the chips with half of the beef and bean mixture, followed by a layer of cheese.
  5. Repeat the layers with the remaining chips, beef mixture, and cheese.
  6. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, and add dollops of sour cream on top.
  8. Garnish with optional toppings and serve warm.

Notes

For a spicier kick, add sliced jalapeños or your favorite hot sauce to the beef mixture. You can assemble the casserole a day in advance, cover, and bake just before serving.
