A delightful blend of classic pecan pie and a scrumptious cake-like cobbler, served warm with vanilla ice cream.

Ingredients

Scale
  • 1 cup pecans
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup corn syrup
  • 1/2 cup butter, melted
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish generously to ensure easy serving later.
  2. In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, corn syrup, eggs, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Stir until just combined.
  5. Gently fold in the pecans, allowing them to get coated throughout the batter.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. Bake for about 45-50 minutes, or until the top is golden.
  8. Allow to cool slightly before serving warm with a scoop of vanilla ice cream.

Notes

Make sure to toast the pecans before folding them in for enhanced flavor. Substitute corn syrup with honey or maple syrup if needed.
