  • 1 can white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro for garnish

Instructions

  1. Sauté the diced onion and minced garlic over medium heat until they soften and become fragrant, about 5 minutes.
  2. Add the cooked shredded chicken, drained white beans, corn, chicken broth, cumin, chili powder, salt, and pepper to the pot. Stir everything together to combine.
  3. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes.
  4. Stir in the heavy cream and cheese, mixing until melted into a creamy sauce.
