Ingredients

  • 2 cups fresh arugula
  • 8 oz pasta (farfalle or fusilli)
  • 1 lemon (juiced and zested)
  • 1/4 cup extra virgin olive oil
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and let it cool.
  2. Combine the cool pasta, fresh arugula, and halved cherry tomatoes in a large bowl.
  3. Create the dressing by whisking together the lemon juice, lemon zest, olive oil, salt, and pepper.
