Crispy on the outside and fluffy on the inside, these zucchini fritters are a delightful side dish or snack bursting with flavor.

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. Combine the grated zucchini, flour, Parmesan cheese, eggs, green onions, garlic, salt, and pepper in a mixing bowl. Mix well until fully integrated.
  3. Heat a non-stick skillet over medium heat and add olive oil to coat the bottom.
  4. Drop spoonfuls of the zucchini mixture into the skillet and flatten slightly to form fritters.
  5. Fry for 3-4 minutes on each side or until golden brown.
  6. Remove from the skillet and drain on paper towels.
  7. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to a month.
