  • 1/2 cup almond flour
  • 1 large egg
  • 1 cup fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking sheet or pizza stone.
  2. Mix together the cottage cheese, almond flour, egg, salt, and black pepper until smooth.
  3. Spread the mixture evenly onto the prepared baking sheet, shaping it into a pizza crust.
  4. Bake the pizza crust for about 20 minutes, or until set and lightly golden.
  5. Heat the olive oil in a pan over medium heat. Sauté the minced garlic until fragrant, then add chopped spinach and cook until wilted.
  6. Spread the spinach mixture over the golden-baked crust.
  7. Top with mozzarella cheese, grated Parmesan, and sprinkle Italian seasoning on top.
  8. Return the pizza to the oven and bake for another 10–15 minutes, until the cheese is melted and bubbly.
